You can prune but not to much anytime of the year , but certainly with Lemons it should be done in February when you can be more vigorous , as this is the time when the tree's are dormant , before the sping growth.

When pruning at any time during the year , just "Trim" the tree so it appears totally uniform in shape cutting off any long upright branches , obviously don't cut any fruit bearing branches , in February you can give the tree a major cut back , but UP to say 1/3 off any branches , always make sure you keep the middle / centre of the tree clear of growth , this ensures sun and air can circulate throughout which keeps down pests etc , at any time of the year remove any low suckers which will sprout from the main trunk at low level.
Try and keep the tree at a height which is manageable at all times , feed 2/3 times a year , spring , early summer and again in late summer.
Also spray regular with insecticide , say every 2 weeks , I use a product called "Dovinex 10" which is a general purpose insecticide.

Hi Mike,What do you know about Olive trees ? I have a very old,very big olive tree,which needs drastic action.Do I cut down the height,its about 8/10 foot tall.It is also very bushy.I dont want to damage it,as it has been there long before us ! Thanks, Di
